There have been several requests for information on my favorite carbs. Here are a few: Maple Grove Farms makes a great Honey Buckwheat Pancake and Waffle Mix. Most of our grocery stores here carry it and it is located with the other pancake mixes. My favorite pasta is De Boles organic spagetti or angel hair noodles made with Jerusalem artichoke flour. It looks more like refined flour noodles and isn't as heavy as whole wheat or spinach. There are lots of cold cereals that are good: Barbera's makes Multigrain Shreaded Spoonfuls and Bear Naked has an all nautral granola. I think the fruit and nut in the orange package is the best. Eden Organic pasta company has great vegetable sprials. When Hannah was small I would cook these in chicken broth (from a carton- then what you don't use is refrigerated for later). I drained the broth and once they cooled put them in little jars and refrigerated them for snacks. One of her favorites still today is Eden Organics alphabets. These I just cook in chicken broth with a little sea salt and serve them like alphabet soup.

I love the idea to put the pasta in little jars for snacks. Brilliant! I use brown rice pasta because I am gluten intolerant, and the brand is Tinkyada. As long as I don't over cook it, it retains a firm texture like regular pasta, but with some added nutrients. I will try the little jar idea and tell you how it goes.
