Let's talk about fruits and vegetables this week. Back in the 80's my best friend, Nancy loaned me a book entitled "Eat For Success". The author trained lots of famous people and prepared foods for them while they were shooting movies, etc. He talked a lot about eating efficiently so that the foods you eat don't deplete your energy but contribute to it. One of the most radical things he suggested was to only eat fruit from the time you got up in the morning until lunch time. He felt that our bodies need to be cleansed on the inside like they do on the outside each day and eating fruit each morning would do that. He said it is ok to eat as much fruit as you want to- you just can't eat anything but fruit. I don't do this every day but when I over eat or eat things out of my normal diet, a fruit cleanse makes me feel better.
Vegetables are not something I get excited about eating but I do try to eat 4-6 servings a day of fruits and/or vegetables. I like to buy the organic lettuces and spinach in plastic tubs. I use them to make salads but I also like to sautee the spinach.
Sauteed Spinach
One plastic box of organic baby spinach
1 T olive oil
1 T garlic (I buy the jar of garlic that is pressed in oil)
Sea Salt to taste
This is really simple. Just put the oil and garlic in a sautee pan on medium heat, when the garlic starts to cook, stir it a little then dump in the spinach, add salt to your liking and sautee until it is limp.
Another easy recipe is the following. Alan likes this and he detests green peas:
Green Pea Salad
Combine in a bowl:
1 small package of frozen organic green peas
1/2 cup chopped celery
1/2 cup chopped onion
Mix together:
2 T Mayonaise
1 T Spike Seasoning (this is found in Health Food Stores)
Sea Salt to taste
Pepper to taste
While the peas are still frozen combine all ingredients in a bowl. The peas will thaw fast so by the time your meal is prepared this is ready to eat.
Another fun dish that is great served with seafood:
Pepper Relish
1 C chopped green peppers
1 C chopped red peppers
1 C frozen organic yellow corn
1 T olive oil
1 T Paprika
Sea Salt to taste
Put olive oil in sautee pan on medium heat. When oil is hot add peppers and corn. As you sautee sprinkle on the paprika and salt. Sautee for around 5 minutes- you want them to be crisp but not crunchy. Serve while warm.
